Freemind – organizational/outlining program
CmapTools - Inspiration-like organizational program
TextWrangler – text/code editor

Graphics, Photo and Publishing
Cyberduck - Open Source FTP Program
Gimpshop – Photoshop-like freeware
Inkscape – paint program like Adobe Illustrator
Seashore – OS X native graphics editing program
Nvu – free web page design program
ArtRage 2 - Free and licensed versions
        Jalbum - picture album
Blender - 3D content creation suite

Web/Chat
Adium – chat program
Flock -  tabbed browsing and integrated Google search, built-in support for photos, blogging, online bookmarks, and news. This could be called the browser for Web 2.0.
X Meeting – video conferencing software
Chax – add tabs to iChat
Firefox – Mozilla based web browser – lots of extras
        iWebSites - enhances iWeb with a merge feature and allows multiple sites that are
                        separate.
        Vienna RSS - RSS reader/organizer

Mac Utilities, Tools and Enhancements
senuti - iTunes backwards allows you to move content from your iPod into iTunes
skim - Skim is a PDF Reader and note-taker for OS X.  Circle, arrows, and notes
FormulatePro - allows you to add text to pdf documents
ClamXav – anti-virus software
smcfancontrol – manually control the two fans in a MacBook Pro
iStumbler – wireless network locator/monitor
KisMac - wireless network locator/monitor
VirtueDesktops – you'll have to see it. Like Spaces in Leopard.
        Quicksilver - File finder with keyboard shortcuts
        iRed Lite - Use your Apple Remote for specific programs
        The Unarchiver - a file unpacker program. Opens more zipped and archived formats.
        Google Maps Plugin - allows a choice of Google maps from your address book
        Todos  - show all your applications as their icons

Audio/Video
        Flip4Mac – play .wmv files
        Audacity - audio recording with different formats
        Switch - converts between audio formats
        Handbrake - Rips/Converts movies.  Great for getting videos off of dvd-r/rw camcorders.
        Audio Hijack Pro  - records audio from applications (free download allows 10 minute
                                    recording at a time)
Science
Celestia - View the universe from different perspectives
Stellarium – planetarium software
        Smell-O-Mints - Periodic Table of the Elements

Programming
       
Scratch  - block programming to create stories and share with others

MacSaber - Not suggested for student laptops
        Liquid Mac - Uses  laptop accelerometers to show the flow of liquid
